Just wondering how much it would cost to switch from a 5.0 to a 5.3 overall. I am wrapping up the audio this summer, and by December, I aim to have my build finished.

Should you decide to switch. Go from 5.0 to 6.2; the little blocks are really great and will fit.
In the exact location where the Chevy 305 was removed, a 5.3 will bolt up. However, as the heads and manifolds are different, the original engine’s EFI cannot be used again exactly. The parts you need to start an older vehicle’s engine can be found in the Summit Racing and/or Jegs catalogs. You could remove the wiring harness, ECM, e-throttle pedal, and other components from that car if you obtained the complete donor truck from which the engine was removed.
