I have a 98 GMC 1500 with a 6-inch lift and 35-inch tires, currently running stock gears. I’m considering 4.56 gears but do a lot of highway driving. Are 4.56 gears too much for my setup?

Assuming you have a Vortec 350, 4.56 should be good. You’d be around 2145 RPM at 70 MPH. If you have a V6 or 305, you might want to consider 4.88.
For a 1995 K1500 Z71, that’s equivalent to 3.73 on stock tires, which is what most 4x4 models have. So, it should work fine.
